Orange Muffins


Okay, I played with a recipe I found online, made some tweaks and adjustments, and voila! Came up with these little gems. My 3yo K gave his stamp of approval! Here's the recipe as I made them. I did make a glaze with orange juice and powdered sugar for the tops, you'll need to play to come up with the consistency you want.
2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup orange juice (if batter is thick you can add a little more)
1T vegetable oil
1 egg
1 tablespoon orange zest
1 8oz container of vanilla yogurt
1t cinnamon
Heat oven to 400 degrees. Grease 12 muffin cups or line with baking cups.
In a medium bowl, combine flour, sugar, baking powder, orange peel, cinnamon and salt; mix well. In a small bowl, combine orange juice, oil, yogurt and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Let cool on rack, and drizzle with glaze, if desired.
