Chicken Cacciatore

Thanks to Erin for doing the $5 dollar Challenge, and for brining great ideas every day! You keep me focused! Here's one that you can serve over noodles or mashed potatoes. I love it over mashed potatoes. I always have leftovers with this for 2 adults and 2 kids.

Chicken Cacciatore

3lbs. bone-in chicken pieces (leg quarters are awesome for this and cheap) $2.00
3TB olive oil
1 onion, big chop .20
1 green pepper , sliced .50
2 cloves garlic, minced .15
1 15 oz. can tomato sauce .40
1 can diced italian tomatoes .50 do not drain
1 t. oregano
1 can sliced mushrooms, drained .50
mashed potatoes or cooked egg noodles---either way, about .50-.75

Heat skillet on medium heat, add olive oil and then brown chicken on both sides. onion, garlic and peppers, sauce, italian tomatoes, oregano and mushrooms. Bring to a boil then turn to low, cover and simmer for 1 hour. Remove chicken from pan, allow to cool until manageable, remove from bones, return to pan, heat through. Serve over mashed potatoes or noodles.
