Strawberry Syrup

I made this syrup today...it has less sugar than a typical syrup recipe. Instead, I utilized honey and fruit juice, with just a small amount of brown sugar. This is great for pancakes, waffles, and ice cream!

1 pound strawberries, washed and diced
1 cup apple juice
1/2 cup honey
2T brown sugar
1t vanilla
2T lemon juice
1t lemon zest

Bring all ingredients to a boil in a small saucepan, and let cook for 15 minutes. Sauce will continue to thicken as it cools. Store in refrigerator. Don't know how long it keeps because it doesn't last long :)

Strawberry Jam

I guess literally the fruits of my labor today. 8 half-pints. Tomorrow I will attempt bread and butter pickles. Keep your fingers crossed.

Strawberry Vinaigrette

It's berry city here at our house right now. I've chopped and frozen the strawberries. Great for smoothies, and for this vinaigrette, which I like to use on spinach salad with red onions, water chestnuts and blue cheese.

1 cup fresh or frozen strawberries, chopped
1/2 cup olive oil
3T white wine vinegar
1/2t sugar
1/4t salt
1/4t pepper
1/4t dried tarragon

Place all ingredients in blender pitcher and blend until smooth. Keeps in fridge for about a week, although I wouldn't really know-- it gets used up pretty fast.
