I love sausage gravy. With a passion. But I know it's terrible for me, so I only fix it on occasion. The problem I usually run into is that recipes are scaled to make a TON of gravy, and since I have no willpower, and it doesn't seem to freeze well, I've come up with a scaled down version that will feed two adults and a couple little guys perfectly. No leftovers. No Michelle in the kitchen licking the pan clean. (well, maybe that)
Michelle's Bit O' Sausage Gravy
1/4lb. sausage
4T flour
2 cups milk
1/2t pepper
In skillet at medium heat, brown sausage, add flour, stir, and let cook over medium heat for about 5 minutes. Add milk and simmer until thickened. Add pepper and serve.
