Lemon Shrimp With Angel Hair Pasta

1lb. shrimp, peeled and deveined

1/3 cup of olive oil

2T butter

3 cloves of garlic, minced

dash of salt and pepper

juice from one large lemon

1T lemon rind

splash of white wine (optional)

½ cup chopped fresh parsley

fresh grated parmesan

1lb. angel hair pasta


Boil water to prepare pasta. In large skillet over medium-high heat, add olive oil, butter, and garlic, and add shrimp to pan. Cook shrimp about 3-4 minutes until pink. Add pasta to water and cook according to instructions. Add lemon juice, lemon rind and wine (if using) to shrimp in skillet. Drain pasta, add to skillet and toss to coat. Add parsley and toss again. Serve with fresh parmesan.
