Tomato and Basil Salad over Cheese


I love simple salads for summer that are full of flavor, and help me use what's in my garden. This Tomato and Basil salad is a favorite, and it's so easy! Here's what you need:

4 roma tomatoes, sliced
1/2 red onion, sliced thinly
3T fresh basil, chopped, plus extra for garnish
3T olive oil
3T balsamic vinegar
salt and pepper
4oz. of your favorite cheese, sliced


After slicing your veggies and basil, toss together in a bowl with the olive oil, balsamic vinegar and salt and pepper. Then you can chill, or go ahead and plate with 1 oz. of sliced cheese per person.
You can use any cheese you want. My favorite is fresh mozzarella, but today I'm using a farmer's cheese. Use the dressing to drizzle on the plate and the cheese. Garnish with extra basil, if desired. So pretty and easy!
