Getting Legumes and Veggies in Your Diet

A huge thanks to Katie at Kitchen Stewardship- She analyzed my meal plan last week and made suggestions about how to increase the beans and veggies in easy ways. She has great insight and information about the benefits of beans in your diet on a daily basis, making complete proteins, and other things that I know I can say I need to think about more! I think I'd be scared to have my menu analyzed! lol!! I do like the tip about lentils and ground beef. I already sneak bulgur into my ground beef and my kids don't notice a thing. I think I'll cook up a batch of lentils and freeze them in small batches and try using it with my ground beef - I would love to get them eating more legumes!

Yes on the lentils! They lead to increased protein, and they are delicious as well. Anything that offers some insurance of increasing nutrition (while lowering costs at the same time!) is a huge boon to the budget and diet in this economy.
