Twice baked potatoes for the freezer

8 potatoes, scrubbed

1 cup of sour cream

4TB butter or margarine

8 slices of bacon, cooked and crumbled

1 tsp salt

½ tsp pepper

1 tsp garlic powder

½ tsp dried dill

1 bag of shredded cheddar cheese, divided


Prick potatoes with a fork. Place directly on oven rack and bake in 400 degree oven for 40 minutes or until soft. Remove to cool. When you can easily touch, cut potatoes in half lengthwise, scoop middles of potatoes into a large bowl, and place potato skins on a foiled cookie sheet. Mash potatoes in bowl with butter, sour cream and seasonings to desired consistency. Add half of the bacon, and half of the cheese. Stir to combine. Scoop potato mixture into skins. Top with remaining bacon and cheese. Place baking sheet in freezer. When potatoes are frozen, place them in freezer bags according to how many you need for a meal. For us, 4 is fine, so this recipe gives us 4 meals.


When ready to eat, place on cookie sheet and bake in 375 oven for 30 minutes or until potato is warmed through and cheese is melted.
