Hy-Vee Bargain Meal of the Week 5/21

Mmmm...grilling season! We're making mango drummies!

Your shopping list
1 mango 1@ 3/$2 = .67
3lbs chicken drumsticks at .99/lb $2.97
1lb. green beans at .99
1 bag Hy-Vee Cole Slaw mix= 1.00

Mango Chicken Drummies:

  • 1 ripe mango
  • 1 or 2 chipotle peppers in adobo sauce
  • 1-2 TBSP brown sugar
  • 1 TBSP vinegar
  • 1/2 tsp ground cumin
  • salt and pepper
  • 3lbs. chicken drumsticks

Preparation:

  1. Puree mango and chipotle peppers in a blender until you get a smooth paste.
  2. Pour the paste in a saucepan and cook over medium heat.
  3. Add brown sugar, vinegar, cumin and salt and pepper to taste. Let it simmer for about 10 minutes. Retire from stove top and let it cool.
  4. Start grill or preheat oven to 425 degrees
  5. Season drumsticks and apply mango sauce with a kitchen brush.
  6. Grill outdoors or bake for 35 minutes.
