Fareway Bargain Meal of the Week 2/25

This week we're making ribs in the slow cooker. Your grocery list:

2lbs. country ribs at 1.69/lb. = $3.38
1 lb. broccoli = $1.29
1 bag of baby carrots = .99

Your menu:

Crockpot Chinese Style Country Ribs
Ingredients:

1/4 cup soy sauce
1/4 cup orange marmalade
1 tablespoon ketchup
1 large garlic clove, crushed
2 to 3 pounds boneless country-style pork ribs

Combine soy sauce, marmalade, ketchup and garlic. Brush on both sides of the ribs. Place in a slow cooker or crockpot and pour remaining sauce over all. Cover and cook on low for 8 to 10 hours. Serves 6 to 8.

Cook carrots in pan with just enough water to cover for 10 minutes until tender. Drain. Toss with 2T butter or margarine and pepper to taste.

Steam broccoli. Toss with 1T olive oil, 1T lemon juice, 1/2tsp dill, salt and pepper to taste.

Total- $5.66

I don't have a Fareway, but that sounds really good, and I DO happen to have a few pounds of boneless country-style pork ribs from a recent markdown. I've been wondering what to do with them since the kids aren't bbq lovers. So, I think I will add orange marmalade to my grocery list (love that stuff, anyway) and fix this next week!!

Another carrot idea...if you like the carrots at the Cracker Barrell: cook your baby carrots in water till nice and tender (about 30 min.). Drain off almost all the water and stir in 1 T. sugar and 1 t. salt. Yum!!

Thanks for posting this!! I had some ribs the other day taht I couldnt think of anything to do with so i just threw them in the cp with bbq sauce. I will be giving this one a try!!

I love the idea for the carrots---I also make a pretty mean brown sugar/butter glaze but since the meat was sweet I figured I'd stay savory.

Woohoo....I found the recipe again! I bought the marmalade this week and then forgot where I found the recipe I wanted to try! Guess this will be going on next week's menu!!

woot! I always have orange marmalade on hand...love it for vinaigrettes, baking and sauces for meat.
