Bacon Chicken Skillet

4 boneless skinless chicken breasts $2.50
1/2 cup of barbecue sauce .20
1 cup of cheddar cheese, shredded .50 (onsale and w/ blinky)
6 slices of bacon, cooked and broken in half .75
2T olive oil .10
2t garlic powder
1/2t pepper
1/4t salt

Heat skillet on medium. Sprinkle salt, pepper and garlic on each breast. Add oil to skillet, then chicken. Brown for 5-6 minutes on each side. Top each breast with bbq sauce, 3 bacon halves, and the shredded cheese. Cover pan until cheese melts and chicken is cooked through.

This is a good basic recipe that I play with all the time. You can marinade the chicken first. I have also put slices of pineapple on the chicken with these, or sauteed mushrooms and onions. You can use different kinds of cheese as well. A quick, easy, versatile weeknight recipe that will have no leftovers!

$3.55---add frozen veggies for $1 and roasted potatoes for .50. Total is $5.05!
