This week we're making slow cooker pineapple pork on rice, with broccoli. Nice slow cooker meal with quick sides for an easy, YUMMY weeknight meal.
Hy-Vee Shopping list for this meal:
1 Hormel Always Tender Boston Butt Pork Roast (try to find one that is about 3lbs, and divide into 3 parts. Freeze 2, keep one) $1.59/lb= $1.59
1 fresh Del Monte Pineapple at $2.48--use half- $1.24
1 bag of mini carrots- .99--use half- .45
1 bag Steamfresh broccoli- 1.18
1 bag Steamfresh brown rice- 1.18
Cut roast into 1-inch cubes. Place in slowcooker. Add pineapple, chopped into small pieces, 1/2 bag of mini carrots, 1 chopped onion, 2T soy sauce, 3T brown sugar, 1/4 cup cider vinegar, 1/4 cup of Sprite or 7Up, and 1T minced garlic. Set crockpot on low. Cook 6-8 hours.
Heat broccoli and rice. Serve pork over rice.
Total for meal: $5.64
