An abbreviated week as we gear up for a road trip!
Breakfasts:
eggs, toast, fruit
open faced english muffin breakfast sandwiches, sausage, fruit
smoothies, peanut butter toast
Lunches:
black bean and corn soup, cheese quesadillas, carrot sticks
salami and cream cheese rollups, crackers, fruit, red pepper strips w/ranch dip
turkey wraps, apples, yogurt
Dinners:
ribs, spinach salad, beans, crusty bread with olive oil dip
chicken patty sandwiches, pasta salad, deviled eggs, veggies and dip
For the road:
making muffins, sandwiches, popcorn, bags of fruits and veggies, assorted other snacks to keep where we're staying. Will post with reports of how constructive I am over the next couple of days!
