I'm using up some of the blueberries I bought today in a blueberry and spinach salad, tossed in a vinaigrette made with blueberry syrup, apple cider vinegar and olive oil. I'm making the syrup tonight to use part of it for the vinaigrette, and then I will freeze the rest for next week when we do pancakes for dinner.
Blueberry Syrup
2 cups of fresh blueberries, rinsed
3/4 cup sugar
1 cup water
splash of vanilla (optional)
1T lemon juice
Bring blueberries, sugar, water and vanilla (if using) to a boil in a small saucepan. Reduce heat and simmer, stirring occasionally, for 15 minutes or until mixture has thickened. Strain through seive or use as is. Add lemon juice.
