Cucumber Sauce


When life gives you lemons, you make lemonade, right? So, if life gives me cucumbers, I make cucumber sauce. I can't officially call this tzatziki, because it only has sour cream in it, not yogurt. You could do half and half w/ plain or greek yogurt and sour cream to make it a little more authentic.

2 small cucumbers, peeled and cut into chunks
2 cloves of garlic, peeled
1 lemon, juiced
2T olive oil
1T fresh dill or mint
1 16oz container of sour cream
sea salt to taste

Place sour cream in a small bowl. Place garlic in food processor and pulse until minced. Add cucumbers, lemon juice, olive oil and dill and pulse 4 or 5 times. Stir mixture into sour cream. Add salt to taste. Refrigerate at least 1 hour. Overnight is even better.

Bread and Butter Pickles


Well, I did it, but I took the safe route for the first time aroud- I used the Ball mix for Bread and Butter pickles. We'll see how it tastes. Next time I'm eyeing another recipe and I'll share if it turns out.

My first garden veggie

LOL. Yes. One little cucumber. That's it. But it's still exciting to get something out of your garden (other than my herbs) for the first time. I plan on doing some pickling when production picks up. In the meantime, what to do with just one?
How about a pretty greek salad? Romaine, roma tomatoes, red onions, feta and cucumber slices. Now I need to make a Greek vinaigrette.
I have some wonderful fresh oregano and basil from the garden, added some lemon rind, lemon juice, garlic pepper, salt, red wine vinegar and olive oil.
Shake, shake, shake and it's all ready for my salad featuring my one lil' cucumber. LOL. I'll post a picture from dinner when I toss the salad along with the lemon garlic grilled chicken I'm making tonight. Yum!

Canning pickles?

I've been canning for a few years now, and seem to make new strides every year. Last year I embarked into the last of tomato and spaghetti sauce, which was awesome. This year, I'm growing pickling cucumbers for canning. Big K and I are the big pickle eaters in the house, loving all varieties....hubby likes sweet, not dill. To be most accommodating to the masses, then, sweet pickles are probably what we'll do, but I'm open to dill as well.
