Fareway Bargain Meal of the Week 4/1

Fareway has their rump roasts on sale for the first time in a while. $1.99/lb. Perfect for Italian roast beef sandwiches! You'll make the meat in the crock pot, too, so it's easy!

Your shopping list:

2lbs rump roast= $3.98
1 packet of italian dressing mix= $1.25
1 bag of russet potatoes @ $1.99- use 2lbs= .80
1 bag of Rotella brat buns= $1.99
1lb. Braeburn apples= .88

Your Menu:

Italian Crockpot Beef-

Place roast in crockpot, add italian dressing mix, 2T worcestershire sauce, 1tsp. of liquid smoke if you have it, cover and cook on low for 6-8 hours. Remove from crockpot, slice thinly, and return to crockpot until serving time. Serve meat on brat buns. This is so good I don't need cheese, but I do occasionally add a sliced onion at the beginning, or a jar of pepperoncini if you like spice.

Roasted Potatoes- Wash and cut potatoes into 1-inch chunks. Put into 1 gallon plastic zip bag. Add 3T olive oil, 2T crushed garlic, 1/2 tsp. of salt and 1/4 tsp. of pepper. Shake well, place on cooking sheet and bake at 425 for 30 minutes until potatoes are crisp and golden.

Slice apples and serve along with potatoes and sandwiches.

Cost of everything is just over $9.00. For a family of 4 the meat and buns will make 2 meals.

Fareway Bargain Meal of the Week 3/4

With the weather here going all kattywampus on us--up, down, up down....I'm getting really itchy for Spring. It's all made worse by the fact that we're being teased with some wonderful temps in the 50's and 60's this week. Sure hope that they'll stick with us, although I rather suspect that we're going to get at least one more snowy kick in the pants.

As I study this week's Fareway ad, I'm finding myself drawn to the early Spring veggies and fruits that are on special. That, combined with a wonderful sale on chicken leg quarters, inspired this weeks menu:

Baked Chicken with Smoked Paprika
Strawberry Asparagus Green Salad
Steamers Corn

Your shopping list:

10lb. bag of chicken leg quarters @ .39/lb -4lbs. needed for recipe= $1.56
1 lb. strawberries= .99
1 lb. asparagus at 1.47- you will use half= .73
1 bag of Dole Spinach= $1.47
1 bag of Steamers corn = .99

Cook carrots in pan with just enough water to cover for 10 minutes until tender. Drain. Toss with 2T butter or margarine and pepper to taste.
